Everyone knows that our cookies are the hottest treats in town, but now Levain is getting even cooler. That’s right friends- Levain Bakery will soon officially be air conditioned! Amazingly enough, we have been operating out of our Upper West Side location sans AC since 1995…that’s fifteen Manhattan summers, for the record!… and with those ovens constantly opening and closing to deliver the freshest and most delicious cookies in the world- well, let’s just say it hasn’t quite been sugar and spice and everything nice with temperatures upwards of 90 degrees. Even though we like to think of ourselves as tough cookies around here…you know what they say, if you can’t take the heat, get out of the kitchen!… I can safely tell you that we’re all nothing short of ecstatic to welcome the new addition to the bakery.

Installation’s going to take some time, but with any luck, we should be beating the heat by the time the solstice rolls around. Stop in soon, and you may even catch the staff doing a little happy dance as they pack away the fans and bid farewell to mountains of melting cookie dough. And don’t worry- even though it’ll be a bit cooler in here, those cookies are still going to be warm out of the oven!

We knew Sinead first as a customer in our Wainscott shop, but this year we got her on the other side of the counter and she has been amazing! We are hoping that in the Fall, when we close for the season in Wainscott, that, when Sinead is not in school, she will be on West 74th Street!

“Never have 12 cookies weighed so much,” said Michael Hirtenstein of Manhattan and Bridgehampton, lifting his purchase from the counter at Levain Bakery in Wainscott on a recent afternoon.
Levain’s signature cookies ($4) are indeed impressive in their heft and lumpy handmade charm. Each weighs six ounces and is nearly half as thick as it is wide. They come in four flavors: chocolate chip walnut, dark chocolate chocolate chip, oatmeal raisin and dark chocolate peanut butter chip.
“There’s kind of an art to scaling it perfectly,” said Connie McDonald, the co-owner with Pam Weekes of the 10-year-old bakery in Wainscott and its 14-year-old sister bakery on the Upper West Side of Manhattan. The cookie’s thickness allows the center to be soft with melted semi-sweet chocolate chunks and chewy with raisins or nuts, while the outside remains crisp and firm. Substantial and satisfying, the chocolate chip walnut cookie is practically a meal in itself.
Levain produces fine artisanal breads (a crusty ciabatta is $4.50, a whole wheat walnut raisin is $6.75), bomboloncini (baked jelly doughnuts, $2 each), and flat pizza breads in flavors like caramelized onion with Parmesan or artichoke Gruyère ($7.50 each). Espresso ($1.50) and cappuccino ($2.75 small, $3.75 large) are also available. There is no table service, but there are benches to sit on.
Rustic fruit tarts are a specialty only at the East End location. A combination of strawberries, blueberries and peaches is framed in a light pie crust ($25 for a six-inch). The sweet tarts are seasonal pleasures, just like Levain’s Wainscott bakery. It closes for the year in late September. (Levain Bakery in Manhattan is open year-round.)

This is the second summer Daniel has worked for us in Wainscott and we are so happy that he came back this summer. We just wish he did not have to go back to school so soon! He is great to have around and keeps us all laughing and is a great dancer!
