As many of you know we, at Levain Bakery, are animal lovers in a big way! In addition to loving meeting all of your favorite animals and giving them treats (when allowed) we all (almost) have pets of our own.
One of our best friends, Dr. Jennifer Katz, is a fabulous vet who, lucky for us, happened to move out in the Hamptons, shortly after we opened our Wainscott location. Along with Dr. Katz’ help we have started to try to trap and spay/neuter some of the many feral cats around the Wainscott Bakery. For the past two years we have accidently ended up with the kittens of some of these cats (long story) who the Veterinary Clinic of East Hampton (www.vetcliniceh.com) has been kind enough to take, care for, and get adopted. Colin, from the Seafood Shop, says he sees tons of these cats around his shop as well.
Our Vet Clinic in the city, Manhattan Cat Specialists (www.manhattancats.com) , also sometimes has beautiful cats and kitties who need homes if you would like to adopt.
So, I guess the point of this is a plea to make sure that everyone you know gets their animals spayed and neutered, as well as adopting from shelters rather then breeders. There are so many amazing animals who need loving homes. If you would like to make a donation, please consider the Veterinary Clinic of East Hampton, to help them with this enormous project of trying to care for all the animals out East who need help and, for one reason or another, have no funding.

Our beloved Bertram is finally home after being away for the past couple of months. Bertram and his sweet dog Cody serve as our greeters, answering all bakery inquiries out front, in the evenings, after we are closed.
Since the day we opened Betram has been a good friend and great fun. And, we are not the only ones who think so! Our block is an amazing community of people and friends. We truly have an amazing neighborhood and have fulfilled our dreams of being a neighborhood bakery.
We have been able to get to meet new babies and watch them grow up into teenagers, we meet people who then move on to new apartments (as we all do in NYC) but they stay in touch and come back to visit and then we have all of our other wonderful visitors from around the city, the country and the world! It is truly wonderful to meet so many amazing people.
And now, thank goodness, Bertram is back, as the pillar of our block!

Pam is one of the owners here at Levain Bakery. Pam does everything!! She is a great baker (we all have learned some superb cake baking skills from her), she keeps the business running smoothly (she is extremely organized) and is great to have around to chat with (one of my favorite things to do with her). She also makes us all very jealous with her coffee making skills …. She makes the best cappuccinos around!

Katie is the newest member of our gang. She has been at the bakery for about 3 months and in New York City for only about 4 months, but she has already fit into our “family” so well. Most days, you will see Katie behind our retail counter with her big smile and very gracious, bubbly attitude. She’s great at keeping the retail area looking its absolute best and loves helping out whenever she can with anything else.

We’ve had a busy few weeks at Levain!
First our sticky buns on Oprah! Thank you Mark and Gail for your appreciation of, and your votes for our cinnamon raisin sticky buns.
Last week our Italian Bread class, last night our Levain Bakery Breakfast class.
Today a celebration of Alexis M’s birthday!
And, last but not least, we are all loving this sunny taste of Spring today! The perfect weather to enjoy coffee and breakfast on the bench, in the sun before it gets too hot. Enjoy the day!

Alexis helps me with all the responsibilities that keep the bakery looking its best. She is also a great asset as part of the retail staff. She’s extremely organized and meticulous and is ALWAYS ready to lend a helping hand. At first she appears a little timid, but once you get to know her she opens up into this bright, fun loving person (as long as there is a little Dionne Warwick playing J)

Alexis is part of our team of bakers and assists me with the everyday happenings at the bakery. She works really hard and always keeps us on our toes with her funny, zany stories and her love for comfort food like triscuits and cheddar cheese. When Alexis is working, we always know that our day will be full of laughter. PS-. Every song that comes on at the bakery is her “FAVORITE SONG”.

Our short trip to Rome was wonderful. We love the Italian culture, language, art, history and, of course, especially the food, wine and coffee. We had some amazing meals, thanks especially to some recommendations of Cesare Casella of Salumeria Rossi, around the corner from the bakery, which we adore.
We did not stop for one minute, criss crossing the city, trying to see and to taste as much as possible in our four short days. One thing our explorations reaffirmed is that what we do here at Levain Bakery is still exceptional. There are very few places in the world (literally) that bake everything they sell freshly each day, and on the premises. Although almost everything we bake has a longer shelf life than one day we believe that if you are coming to our bakery you should get the freshest product possible. It also allows us to donate to organizations in need and give something back to the community and our world.
We hope that our customers appreciate that the reason we sometimes run out and perhaps do not have a huge selection is because we try to make everything we make the best and the freshest possible.

It seems, here at Levain Bakery, that a few of us are in love with Italy as well as baking. Some of us even attempt to study Italian in our free time and fantasize about living there. So it should not be surprising that two of us are in Rome now, for four short days, and will report back on the sites, the food and the wine next week!
And, of course, we will also have the results of our traditional, unofficial, Oscar pool!

Blogs are a great thing. With a few sentences and maybe a picture or two, you can really let someone into your world. That has been our intention with the Levain blog. To share ideas, thoughts and experiences that will make our customers feel they are a part of what happens here. Whether it’s learning a new technical skill or just chatting about our weekend, we want everyone to know what is going on…… Now that I’ve written a few entries and you have gotten to know a little bit about me, I’d like to introduce my great staff. I’ve decided that for the next few weeks, I want to introduce each one of them to you through this blog (if you want to know more about them, you can come visit!). Each staff member will be featured individually and will share a little bit about themselves. You will get to know our production staff, our retail staff and maybe even Pam and Connie! Every single person who works here makes Levain Bakery run smoothly. From the 4 am bakers to the retail person who sells at our last cookie every night-every member of our team counts 100% and now you will get to put a face to the cookie!
